Twice Baked Potatoes
2 medium white potatoes, baked
2 T butter or margarine
1 T milk
¼ t salt
1 pkg. 3 oz. cream cheese, cubed
2 T sour cream
1 dash paprika
Cut baked potatoes in half and carefully scoop insides into electric mixer bowl. (save skins) Add rest of ingredients except paprika. Mix until cheese is melted and mixture is smooth. Spoon mixture back into skins and sprinkle paprika on top. Put back in oven @ 350 degrees to reheat for about 10 min. May be made day ahead and put in refrigerator. If you do that, put in oven @ 350 degrees to reheat for about 45 min. Serves 4
