Pickled Beets

 

9 med. size beets, washed with tops removed.  Cook until tender (about 1.5-2 hours.)

 

Cool slightly, peel and then slice, add to below liquid mixture after it has boiled.

 

Liquid Mixture

 

2 C    water

2 C    cider vinegar

2C     brown sugar

1t     allspice

2      cinnamon sticks

 

Combine above ingredients in a large pot and bring to a boil.

 

1      onion, sliced

 

Cook in about 1.5 cups of water until transparent.

 

Add cooked, sliced beets and cooked onion to liquid mixture and bring to boil for a few more minutes.

 

I use about 4-6 pint canning jars.  Boil jar tops for a few minutes.  Put beets and onions in jars and cover with liquid mixture.  (Discard cinnamon sticks) Cover and refrigerate.  Will last 3 – 4 weeks.
