Irish Potato Casserole
8-10 medium potatoes
1 8 oz. sour cream
1 8 oz. cream cheese
½ cup melted butter
1 small grated onion
1 lg. shredded cheddar cheese
paprika on top

Peel, cut and boil potatoes then lightly mash. Add softened, cut up cream cheese and rest of ingredients. Put into 2 qt. casserole lightly greased. Sprikle with paprika. Put foil over top and refrigerate overnight. 15 min. before baking remover from refrigerator. Bake at 350 degrees for 45 min. (I halved ingredients for 4 people)
