Vegetable Beef Barley Soup

 

1      small chuck potroast, cut in 1” pieces

       

        Brown in 1 T butter.

 

Add:

 

1      large can V8 vegetable juice

6      C water

2      C chopped celery and leaves

1      large onion, chopped

3      carrots, chopped

½     C pearl barley

1      pinch salt

 

        Combine all ingredients in large pot and simmer for 2 hours.
