Broccoli Cheese Soup

 

2      T butter or margarine

¼     C chopped onion

2      T flour

2-1/2 C milk

¾     lb. (12 oz.) Velveeta cheese, cut up

1      pkg. (10 oz.) frozen chopped broccoli, thawed, drained

1/8    t pepper

 

Melt butter in large pan on medium heat.  Add onion; cook and stir 5 minutes or until onion is tender.

Add flour; cook 1 minute or until bubbly, stirring constantly.

Stir in milk.  Bring to a boil, Reduce heat to medium-low; simmer 1 minute.

Add remaining ingredients.  Cook until cheese is melted and soup is heated through, stirring occasionally.

 

Makes 6 servings about 1 cup each.
