Italian Tomato Sauce

 

1      can (2 lb 3 oz. or equivalent) Italian tomatoes

1-1/4 C olive oil or salad oil

1      C finely chopped onion

1      clove garlic, crushed

1      6 oz. can tomato paste

2      sprigs parsley

1      t salt

2      t sugar

2      t oregano

½     t basil leaves

¼     t pepper

 

1.  Puree undrained tomatoes in electric blender.

2.  In hot oil in large sauce pane sauté onion and garlic until golden brown, about 5 min.

3.  Add pureed tomato, paste, 1-1/2 cup water, parsley, salt, sugar, oregano, basil, pepper        and mix well.

4.  Bring to boiling, reduce heat and simmer.  Cover and stire occasionally for 1 hour.

 

Makes 5 cups
