Peach Pie
2 pie crusts either from scratch of Pillsbury refrigerated pie crusts
12-14 peaches, peeled and sliced
½ C sugar
½ C brown sugar
½ C flour
1 t cinnamon
¼ C lemon juice
1 t almond extract
2 T butter or margarine
Place one pie crust in bottom of pie pan. Mix lemon juice and almond extract together and pour over peaches and mix well. Mix sugar, brown sugar, flour, and cinnamon together in small bowl. Put half of peach mixture in pie pan. Spread half of sugar mixture over peaches. Cover with last half of peaches and spread last half of sugar mixtures over peaches. Dot with butter or margarine. Cover with other pie crust and crimp edges. Use fork to prick top pie crust in at least 8 places. Put pie on baking sheet. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake for another 40 minutes. Cool several hours before serving.
