Grandma Grump’s Peanut Butter Drizzle Cookies

Cookie Base:

2          C flour

2          C quick-cooking oats

1          t baking soda

½         t salt

2          sticks (1 cup) butter or margarine

2          eggs

2/3       C creamy peanut butter

1          t vanilla

1          pkg. (12 oz.) semi-sweet chocolate chips

Topping:

1       C confectioner’s sugar

1/2       C creamy peanut butter

¼         C milk

 

1.      Heat oven to 350˚.  For the cookie base, stir together the flour, oats, baking soda and salt in a large bowl; set aside.  Beat together the butter and sugars with a mixer on medium speed until fluffy;   add the eggs, beating until well combined.  Add peanut butter and vanilla;  beat until smooth.  Stir in the flour-oat mixture 1 cup at a time.

2.     Press dough into a 15” x 10” jellyroll pan;  bake until firm and beginning to brown, 20-25 min.  Meanwhile, for topping, stir together confectioners’ sugar, peanut butter and cream in a small bowl; set aside.

3.     Remove cookie base from oven;  sprinkle with the chocolate chips.  Spread chocolate over the entire sheet as sit melts.  (If chocolate chips don’t melt completely, return pan to oven for 30 seconds.)  Drizzle the topping over the chocolate.  Place pan on a rack to cool completely.  Cut into 11/2” x 1” bars.
