$100 Pecan Cookies
1 cup butter flavored Crisco
1 cup butter
2 1/2 cups sifted confectioner’s sugar
1 tablespoon vanilla
3 cups flour (all purpose)
3 cups cornflakes
2 cups chopped pecans
Preheat oven 350 degrees
With an electric mixer cream shortening and butter, then add confectioner’s
sugar.
Mix in vanilla and beat in flour gradually. Dough might not hold together at
this point, it’s ok.
By hand stir in cornflakes and pecans. Dough will be stiff.
Roll large spoonfuls into balls, mashing dough together. Bake on
ungreased cookies sheets for 12 to 15 min. lightly browned. Remove from
sheets to cool.
I added the confectioner’s sugar, although recipe didn't suggest it , when they
were cold.
Suppose to make 100 cookies, but, size will determine how many you get.
