Peanut  Butter Fudge – Harriet Pihera

 

3      C sugar

1/8    t salt

1      C milk

1      C peanut butter

2      T butter

1-2    C mini marshmallows

1      t vanilla

 

        Mix sugar, salt and milk in a 3 qt. pan.  Cook on medium heat and when it comes to a boil let it cook until candy thermometer reaches about 230-234 degrees.   Remove pan from heat and stir in peanut butter, butter, marshmallows and vanilla.  Pour into either an 8” x 8” or 9” x 9” greased pan. 

 

 

Note:  When I make this fudge I usually removed pan from burner after temp. on candy thermometer reaches 225 degrees as fudge get a little too hard if I cook it any longer than that.  I believe that is because I cook on an electric stove.  It may be different on a gas stove.
