Pumpkin Roll – Kathy McDermott

 

Beat: 3 eggs with

        1 C sugar

 

Blend in: 2/3 C pumpkin filling

           1 t salt

           1 t soda

           2T cinnamon

           1 t pumpkin pie spice

           ¾ C flour

 

        ¼ C chopped walnuts for topping

 

Grease cookie sheet and lay down full sheet of wax paper. Grease wax paper, spread ingredients and sprinkle with walnuts.  Bake @ 375 degrees for 15 min.

 

Sprinkle with powdered sugar.   Lay kitchen towel over whole pan and turn over.  Peel off wax paper.  Roll cake and towel together into log.  Let cool on wire rack.

 

Filling:

 

Blend:  8 oz. cream cheese

        1 t vanilla

        2 T butter

        1 C powdered sugar

 

Unroll log and spread filling.  Re-roll and chill.  Cut into slices. 

 

If you use a small can of pumpkin you can make 2 logs and if you use a large can of pumpkin you can make 4 logs.
