Pumpkin Bars – Oweta Neuhauser (Taste of Home Magazine)

 

4          eggs

1-2/3    C sugar

1          C vegetable oil

1          can (16 oz.) pumpkin

2          C all-purpose flour

2          t ground cinnamon

2          t baking powder

1          t baking soda

1          t salt

 

Icing:

 

1          pkg. (3 0z.) cream cheese, softened

2          C confectioners’ sugar

¼         C butter or margarine, softened

1          t vanilla extract

1          to 2 T milk

 

In a mixing bowl, beat egs, sugar, oil, and pumpkin.  Combine flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well.  Pour into an ungreased 15” x 10” x 1” baking pan.  Bake at 350° for 25-30 min.  Cool completely.

 

For icing, beat cream cheese, sugar, butter and vanilla in a small mixing bowl.  Add enough of the milk to achieve desired spreading consistency.  Spread over bars.
