Coffee Cake Muffins
¼ C firmly packed light brown sugarm
¼ C chopped pecans
1-1/2 C all-purpose flour
2 t baking powder
¼ t baking soda
¼ t salt
½ C sugar
1 large egg
¾ C milk
1/3 C vegetable oil
Combine first three ingredients and set aside.
Stir together flour and next four ingredients in a large bowl; make a well in center of mixture. Stir together egg, milk and oil and add to flour mixture, stirring just until dry ingredients are moistened.
Place paper baking cups in muffin pans.
Spoon about 1 T batter into each of 12 cups, sprinkle evenly with half of brown sugar mixture. Top evenly with remaining batter and sprinkle with remaining brown sugar ixture.
Bake at 400 degrees for 22 – 24 min. our until lightly browned. Yield 1 doz.
