Apricot Dream Cheesecake

 

1-1/2 C graham crackers crumbs

3      T melted butter or margarine

 

Mix well and press into bottom of spring form pan that was sprayed with cooking spray.

 

1      small package apricot jello

2/3    C boiling water

 

Stir boiling water into gelatin in large bowl and mix for at least 2 min. until gelatin is completely dissolved.  Cool 5 min.

 

Pour dissolved jello into blender along with:

 

1      C cottage cheese

1      8 oz. cream cheese

 

Blend on medium speed until well blended, occasionally scraping down sides of blender.  Pour into large bowl. And carefully stir in:

 

2      C Cool Whip

 

Pour on top of crust and refrigerate for at least 4 hours.  For decoration drop small spoonfuls of Cook Whip around edge and a small amount in center with a spoonful of apricot preserves for color.
