Zucchini Bread

 

3          eggs

1          C vegetable oil

2          C sugar

2          t vanilla

2          C shredded unpeeled zucchini

1          can 8.4 oz.crushed pineapple (small can)

1          C chopped nuts, optional

3          C flour

2          t baking soda

1-1/2    t cinnamon

1          t salt

¾         t nutmeg

¼         t baking powder

 

            Beat eggs, oil, sugar and vanilla until thick.  Stir in remaining ingredients.  Mix well.  Pour in two greased loaf pans.  Bake at 350 degrees for about 1 hour or until toothpick comes out clean in center.
