Zucchini Bread 2 – Harriet Pihera

 

3      eggs, beaten

1      C oil

2      C sugar

2      C grated zucchini

2      t vanilla

3      C flour

1      t baking soda

1      t salt

1      t cinnamon

½     C chopped nuts (optional)

 

        Mix together ingredients in order given.  Pour into 2 greased 9” x 5” loaf pans.  Bake at 325 degrees for 1 hour or until tester inserted in center comes out clean.
