Grilled Tomato Melts
3 lg. tomatoes
4 oz. Monterey Jack cheese, shredded
1 sm. red sweet pepper, finely chopped
¼ C sliced almonds
Preheat over to 350 degrees. Cut each tomato into 3 or 4 slices, ½” thick. Cover cookie sheets with foil and place tomatoes on foil. Sprinkle with cheese, pepper and sliced almonds. Bake about 15 min. or until cheese is melted. Can be made day ahead and baked before serving. Serves 6
